Tasting Notes
Aromas of blackberry and subtle toasty oak rise from the glass, capturing the essence of Tasmania’s cool-climate vineyards. The palate delivers rich black plum flavours layered with hints of herbal aniseed, grounded by fine tannins and a smooth, lingering finish of dark chocolate. The island’s long, even ripening season brings clarity and balance to this expressive wine.
Pairing Suggestions: A natural partner to roasted racks of lamb, marinated short ribs, or hearty seasonal fare.
WINE TECH
Hand picked from cane pruned vines. The blend consists of 50/50 ratio of Malbec and Merlot fruit used. Destemmed and cold soaked for a couple of days prior to adding yeast to start the fermentation process. Malbec and Merlot remained seperate for fermentation and for the first 9 months in french oak barriques before been blended together and returned to their oak barrels for the remaining 4 month prior to bottling. Malbec clones used are potts and 1056. Merlot clones Entav 343, Entav 181 and Q45.
