Tasting Notes
Dark red fruits and subtle spice aromas lift from the glass, leading into a complex palate layered with ripe raspberry, rhubarb and mulberry. Fine tannins provide structure and balance, while a delicate peppery finish adds depth and elegance.
Pairing Suggestions: Ideal with marinated red meats, charcuterie, and antipasto platters.
WINE TECH
Hand picked from cane pruned vines. The fruit was fully destemmed and cold soaked for a couple of days prior to adding yeast to kick start fermentation. Two clones of shiraz PT 23 and 1654 were in the blend with clones remaining seperate for fermentation and also in barrel for 9 months before combining together and returning back to their french oak barriques for the remaining 4 months prior to bottling.
