Tasting Notes

Our 2021 Pinot Noir is bold and expressive, opening with rich, dark cherry aromas evoking the indulgent warmth of Nan’s chocolate cherry liqueur cake, layered with vanilla, cedarwood and a subtle sappy note. The palate unfolds with ripe dark cherry and red currant, complemented by dark chocolate and warming clove spice. Fine-grained tannins provide structure and grip, balanced by a savoury edge and a long, persistent finish. Rich, full-bodied and distinctly expressive of Tasmania’s East Coast.                                   Perfect with slow-roasted lamb shoulder, duck breast with cherry jus, or earthy mushroom and truffle dishes.

WINE TECH

Hand-picked fruit from cane-pruned vines. The blend comprises four Pinot Noir clones: D2V5, G5V15, D5V12 and MV6.

The majority of the fruit was destemmed prior to fermentation, with 10% retained as whole bunch. Each clone was fermented separately and matured individually in French oak barriques for nine months, allowing each parcel to develop its own character and complexity before being blended in tank. The final blend was gently cross-flowed prior to bottling.

A challenging, wet growing season ultimately delivered a small parcel of exceptional cool-climate fruit. The fruit was allowed to ripen slowly and develop through the cooler conditions, while the influence of coastal breezes and natural airflow helped maintain clean, healthy fruit throughout the season. The result was a distinctive and prized parcel of Pinot Noir, capturing the richness, freshness and unique character of our East Coast Tasmanian site.
